Apple Vanilla Syrup
Pancake Batter 3-5 minutes prep / 25-30 minutes to cook
Preheat oven to 400 degrees. Combine all batter ingredients (except butter) in a blender and mix thoroughly. Place oven-proof pie plates in 400-degree oven with ¼ cup butter. When the butter is melted, pour batter from the blender into the pie plate, add cooked apples and bake for 25-30 minutes.
Apples 5-7 Minutes
Peel, core and slice apples. Heat a medium sauté pan and add butter, pie spice, a splash of water and vanilla bean. Cook until apples are tender; set aside to add to the batter before cooking pancake.
Fromage Blanc 5-10 minutes
Combine goat cheese and cream cheese in a mixer. Paddle at low speed until well mixed. Add a splash of crème to smooth out consistence. Place the cheese mix into a stainless steel bowl and add fresh lemon zest. Finish by folding in ½ cup sweetened whipped cream. Set aside for final presentation.
Apple-Vanilla Syrup 15-20 minutes
Combine apple juice and vanilla bean in a small sauce pot. Reduce until syrup consistence.
Set syrup aside keeping warm until final presentation.
Final Presentation 3-5 minutes
Remove Dutch Baby from the oven, scoop fromage blanc and place on top of the pancake. Generously pour the apple syrup over the pancake, dust the top of each warm pancake with a little powdered sugar and garnish with apple blossom mint. Serve immediately.
