Poulet Bleu Dinner

Partake in the passion of culinary visionary, Peter Thiessen, a poultry man from Abbotsford, BC who spent years carefully breeding a flock of chickens to come as close as possible to the famous Poulet de Bresse from Burgundy, France. After nearly 20 years of overcoming a series of challenges, he successfully shaped the journey of the American Bresse, the Poulet Bleu.
Following Peter’s death in 2012, his son David took up the commitment and we now enjoy the legendary flock in the United States.
It is this legacy we will celebrate this evening…with a thoughtfully composed and beautifully prepared Lummi Island Poulet Bleu Chicken Five Course Tasting Dinner paired with fitting wines.
Among those in attendance will be Riley Starks (former owner of Willow Inn on Lummi Island and present owner of Nettles Farm) and Bernie Nash who has been instrumental in acquiring the genetic and bringing the chickens to the U.S. where he manages the flock at Lummi Island and Castle Rock WA. The event promises to be very special indeed.
