Quintessentially Northwest restaurant to donate portion of proceeds to Chefs Collaborative

Eat Green on Earth Day at Copperleaf Restaurant

SEATTLE – (April 8, 2013) – In celebration of Earth Day, Copperleaf Restaurant & Bar is offering a limited time five-course prix fixe Earth Day dinner menu, Monday, April 22 through Thursday, April 25, 2013, with proceeds benefitting the Seattle Chefs Collaborative chapter.

Supporting its commitment to providing exceptional farm-to-table cuisine sourced from local and sustainably minded farmers, ranchers and artisans, Copperleaf is donating 10 percent of all Earth Day dinner proceeds to Chefs Collaborative, a leading nonprofit network of chefs that fosters a sustainable food system through advocacy, education, and collaboration with the broader food community. In addition to the restaurant’s alignment with the organization’s cause, Roy Breiman, culinary director at Cedarbrook Lodge, serves as the vice president of the Seattle Chefs Collaborative chapter.

“Since our inception almost three years ago, Copperleaf has focused on responsible, sustainable and local cuisine, which all complement Chef Collaborative’s mission,” said Breiman. “In addition to our upcoming annual Savor auction for Food Lifeline, we’re celebrating Earth Day with a delicious tasting menu that not only celebrates spring, but also benefits another great cause.”

Executive Chef Mark Bodinet has developed the following Earth Day menu:


Cauliflower Crème
White Truffle, Grilled Bosc Pears, Miners Lettuce

 Olive Oil Roasted Beets
Mad Hatcher Hen Egg Emulsion, Roasted Romaine, Victoria Island Asparagus

Neah Bay Halibut
Savoy Cabbage, Pacific Rose Apples, Rye Bread, Salter Caper Vinaigrette

Snake River Farms Beef Ribeye
Early Season Sweet Peas, Grilled Carrots, Spring Onions, Artichoke Mustard

Lemon Verbena Ice Cream
Burnt Marshmallow, Pistachio Custard, Vanilla Shortbread


The Earth Day dinner menu will be available in the Copperleaf dining room during dinner service, from Monday, April 22 to Thursday, April 25, for $75 per person, excluding taxes and gratuity. Organic and bio-dynamic wine pairings are also available for an additional $35 per person. Reservations are strongly encouraged and can be made by calling Copperleaf directly at 206-214-4282.
