Culinary Director of Cedarbrook Lodge Releases Book on Napa Valley and Sonoma on November 20th

SEATTLE – (November 13, 2012) - Drawing from his many years of experience as a chef in Napa Valley and Sonoma, Roy Breiman, culinary director of Seattle’s award-winning Cedarbrook Lodge and Copperleaf Restaurant & Bar, announces the release of his book, “Wine Country Chef’s Table,” available November 20th.

The 224-page hardcover book pays homage to the many chefs, farmers, artisans, olive oil makers and vintners who are devoted to producing exceptional cuisine, wines and harvested ingredients from the California wine country for many to enjoy. Co-authored by Laura Smith Borrman and published by Globe Pequot Press, “Wine Country Chef’s Table” features full-color imagery from restaurants and destinations in Napa Valley and Sonoma with more than 100 recipes from the top wine country chefs, as well as narration of the region, painting pictures of what many refer to as the “modern-day Garden of Eden.”

“It’s a great privilege and honor to release this book which portrays a region where I spent many of my professional years,” said Breiman. “My hope is that through the book, readers will have a better understanding of wine country and be excited to visit and explore the destination, and to also learn how they can create these well-known dishes paired with exceptional wines in their very own kitchens.”

In “Wine Country Chef’s Table,” Breiman leads readers on a culinary journey through renowned kitchens, gathering exquisite recipes including Bacon Cheddar Breadsticks from Thomas Keller’s Bouchon Bakery and Rutherford Ribs braised in red wine, fiscalini pearl tapioca and baby carrots from Ken Frank’s La Toque. Additionally, Breiman highlights many of the region’s great winemakers including DaVero, Schramsberg Vineyards, Elyse Winery, Duckhorn Vineyards and Domaine Carneros Winery.

About Roy Breiman
A California native drawn by centuries of history and culinary tradition, culinary director, chef and author Roy Breiman moved to France, where he lived for several years. During his time there, he worked in kitchens of many Michelin-starred restaurants, primarily in Nice and Eze Village on the Côte d’Azur. He is also owner of The West Coast Kitchen LLC, where he is providing counsel to a variety of groups on sustainable food concepts. In 1995 Breiman became a member of the James Beard Foundation. PBS named Breiman one of “America’s Rising Star Chefs,” John Mariani of Esquire magazine named him a “Chef to Keep Your Eyes On,” and Bon Appétit magazine named him one of 13 “Top Hotel Chefs in America.” Breiman is the Culinary Director of Seattle’s award-winning Cedarbrook Lodge and also serves on the board of the Puget Sound Regional Food Council, helping to strengthen sustainable food systems and policies for the Puget Sound region.
