Award-winning Seattle restaurant releases new seasonal lunch, dinner, lounge and beverage menus

SEATTLE – (October 25, 2012) - Celebrating the abundance of Pacific Northwest bounty and changing seasons, Copperleaf Restaurant & Bar announces its newest menus, available now at the award-winning sustainably focused restaurant in Seattle.

Led by renowned Culinary Director Roy Breiman and Executive Chef Mark Bodinet, Copperleaf is defined by fine, yet approachable, food and wine experiences that emphasize responsibly harvested, locally sourced farm-to-table Northwest cuisine.

“Mark’s menus directly reflect our region and celebrate the tremendous partnerships we have with local small farmers,” said Breiman. “In addition to our lunch, dinner and lounge menus, we’ve reintroduced a tasting menu for dinner which features five courses, with both traditional and vegetarian options available.”

Copperleaf’s new menus highlight the season’s best ingredients and flavors in dishes such as Ozette Potato Soup with black truffle, garden thyme and pickled chanterelles; Caramelized Diver Scallops with caramelized parsnip, Brussels sprouts, Richland hazelnuts and pomegranate vergus; Olive Oil-Poached King Salmon with white sturgeon caviar, glazed cauliflower and Meyer lemon butter; andMalted Milk Ice Cream with banana chiboust and candied Holmquist Farm hazelnuts.

Aligning with its commitment to source from the Pacific Northwest, Copperleaf continues to grow its relationships with local farmers and purveyors, a majority from within 100 miles of the restaurant. Dishes representative of these partnerships on Copperleaf’s new menus include Collin’s Family Farm Bosc Pears with parmesan reggiano, Banyuls vinegar, Swiss chard and soubise; Painted Hills Natural Beefwith braised house-cured bacon, creamed spinach, garnet yams and bordelaise; andPleasant View Farms Seared Foie Gras “PB & J” with concord grape jam, spiced brioche and cashew butter.

In addition to the valuable partnerships with farmers and ranchers, Chef Bodinet maintains his Chef’s Garden onsite at Copperleaf where he harvests a variety of the herbs and produce used on his seasonal menus. Copperleaf’s bar program features numerous liqueurs and spirits from local distilleries, as well as a wine list comprised of more than 85 percent local and regional varietals from top Pacific Northwest vintners, including more than 24 biodynamic and organic varietals and Copperleaf’s private label red wine.

Since its inception in 2010, Copperleaf was named a 2011 Top 10 New Restaurant by Gayot, as well as Best New Restaurant to open in 2010 by Seattle Magazine readers.

Copperleaf Restaurant is open daily for lunch from 11 a.m. to 2 p.m. and dinner from 5:30 to 9:30 p.m. Copperleaf Bar is open daily from 11 a.m. to 11 p.m. with happy hour served Tuesday through Friday from 4:30 to 6:30 p.m.
