Award-winning Seattle chefs will make their appearance April 17

Culinary Director Roy Breiman and Executive Chef Mark Bodinet of Copperleaf Restaurant at Cedarbrook Lodge

SEATTLE – (March 28, 2012) - Culinary Director Roy Breiman and Executive Chef Mark Bodinet of Copperleaf Restaurant at Cedarbrook Lodge will travel to New York City and prepare a quintessentially Northwest farm-to-table culinary experience at The James Beard House on April 17, 2012.

Bodinet, 28, formerly on the culinary team at the world-renowned French Laundry, will make his debut at the Beard House. Together, Bodinet and his mentor, Roy Breiman, will showcase their commitment to sustainable farm-to-table cuisine through an exquisite multi-course dinner highlighting the best northwest ingredients which include produce, meats, assorted local seafood and wines.

In addition to the dinner at The Beard House, Breiman will introduce his book that will be published this fall by Globe Pequot Press, Wine Country Chef’s Table, highlighting Napa and Sonoma valley cuisine, wineries and farms. Formerly in the kitchens of many top dining destinations throughout the world including Salish Lodge & Spa; Maurice Restaurant at the Meridien Hotel in New York; Hotel Negresco in Nice, France; and Meadowood Napa Valley, Breiman has been recognized with multiple awards including America’s Rising Star Chefs by PBS, a “chef to keep your eyes on” by Esquire and one of 13 “Top Hotel Chefs in America” by Bon Appetit.

At the intimate 30-seat farm-to-table restaurant, Bodinet and Breiman lead the culinary team, showcasing dining excellence with a focus and commitment to using local ingredients. In addition to many herbs and vegetables grown in Cedarbrook’s onsite Chef’s garden and mushroom patch, Copperleaf sources most of its menu from within 100 miles of the restaurant.

The James Beard House is a historic townhome where James Beard lived, cooked and taught. Copperleaf Restaurant’s dinner at The Beard House on April 17 begins at 7 p.m. with a 45-minute reception including passed hors d’oeuvres and a walkthrough of James Beard’s kitchen where guests will see the chefs in action. Guests will then be seated for the tasting menu. Dinner will conclude at 10 p.m. with a parade of chefs and conversation about the dinner. The price to attend is $130 per person for members of the James Beard Foundation and guests of Cedarbrook Lodge, and $170 per person for the general public.
