SEATTLE – (September 20, 2011) - Defending his title for Best Lamb Shoulder, Best Lamb/Wine Pairing and Best of Show in the 2010 Seattle Lamb Jam, Copperleaf Restaurant Executive Chef Mark Bodinet will represent Seattle at the 2011 Lamb Jam Masters competition on September 25th at City Winery in New York City.

Bodinet dominated his competition in last year’s Seattle event against 20 local chefs, presenting Lamb Shoulder Confit with preserved huckleberries and creamy parsnips paired with 2007 Columbia Rediviva from Buty Winery of Walla Walla, Wash.

At his intimate 30-seat farm-to-table restaurant in Seattle, Bodinet, along with Culinary Director Roy Breiman, showcases culinary excellence with a focus and commitment to using local ingredients, most sourced from within 100 miles of the restaurant.

Copperleaf was named a 2011 Top 10 New Restaurant by Gayot, as well as Best New Restaurant to open in 2010 by Seattle Magazine readers. Focusing on nourishing the minds, bodies and spirits of its guests, Copperleaf strives to set a model of responsible and sustainable culinary practices by utilizing concepts such as onsite farming, mushroom harvesting, composting, water reclamation, as well as sourcing meat, dairy and produce from local ranchers, farmers and artisans.
