Seattle’s Award-Winning Restaurant Introduces New Dessert & Wine Menus

SEATTLE – (July 27, 2011) - Created especially for foodies craving something other than cake and ice cream, Copperleaf Restaurant at Cedarbrook Lodge has introduced a lineup of mouthwatering desserts and exquisite wines that will satisfy even the most sophisticated palate.

“It pleases us to offer our guests delicious, satisfying desserts and premium glasses of wine,” said Roy Breiman, culinary director of Cedarbrook Lodge. “Our choices showcase the best local and seasonal flavors and textures.”

Culinary Director Roy Breiman and Executive Chef Mark Bodinet have fashioned Copperleaf’s new dessert menu to highlight complex flavors and thoughtful culinary presentation. The menu includes seasonally inspired dishes, such as Coconut Sorbet with caramelized pineapple, lime pound cake and lemongrass syrup; Chocolate and Cherries with graham crackers, cherry marshmallows and frozen chocolate glace; Bellweather Farms Fromage Blanc with toasted pistachios, English thyme and lavender honey; and Rhubarb Ice Cream with garden basil and Holmquist Farm hazelnuts. The menu also includes “desserts to sip on,” featuring fortified beverages including 20-year Fonseca Tawny Post and Fonseca Vintage 2000 Port.

Copperleaf Restaurant is also unveiling a Captain’s List that represents the trademark of excellence in Pacific Northwest Vivification featuring local wine. The list includes nine carefully selected varietals, such as Reynvann Family Vineyards Syrah 2008, DeLille “Harrison Hill” Red Blend 2008 and Waters & Gramercy Cellars 21 Grams Red Blend 2008. The Captain’s List also includes select Northwest Select Magnums from local vintners Abeja and Long Shadows.
