Seattle’s quintessentially Northwest restaurant prepares Christmas feast

Christmas Feast at Cedarbrook Lodge

SEATTLE – (December 3, 2010) – Cedarbrook Lodge, a quintessentially Northwest hotel located on 18 acres of restored wetlands in Seattle, is preparing a delectable four-course dinner for all to enjoy at itsCopperleaf Restaurant, available Christmas Day with seating times between 1 and 6 p.m.

Executive Chef Mark Bodinet’s four-course menu features fresh, natural and locally sourced dishes including Celery Root Agnolotti with braised celery hearts and black truffle; Roasted Endive Salad with vanilla poached apples, chestnuts and honey poached cranberries; Nash Family Farm Squab with spiced brioche, red beet marmalade, young spinach and Cascade huckleberries; and Theo’s Dark Chocolate Bavarian with Willamette Valley hazelnut sponge cake and pomegranate sorbet.

“Once again, Chef Mark has prepared a wonderful menu highlighting signature Northwest ingredients, flavors and textures,” said Culinary Director Roy Breiman. “This is a great stress-free way to step in from the cold and enjoy the warmth of the season around the table with loved ones.”

Copperleaf Restaurant offers guests an inviting and personalized dining experience, where a large stone fireplace serves as the restaurant’s focal point and functional windows frame views of Cedarbrook’s lush wetland setting. Unique elements such as 100 percent organic bamboo fabrics, hand-blown glass sculptures by renowned local artists and artisanal handcrafted serving pieces accent the dining room.

The four-course Christmas Day Menu is $75 for adults and $34.50 for children ages 5 and over. Optional Northwest wine pairings are available for an additional $30. Seating times are at the top of every hour between 1 and 6 p.m. Reservations are required and can be made by calling Copperleaf at (206) 214-4282.
