Roy Breiman and Mark Bodinet bring culinary insight & expertise to new Seattle-area organizations
SEATTLE – (November 16, 2010) - Cedarbrook Lodge, a quintessentially Northwest hotel located on 18 acres of restored wetlands in Seattle, is pleased to announce the involvement of Culinary Director Roy Breiman and Executive Chef Mark Bodinet as founding board members of two newly formed food organizations: the Puget Sound Regional Council’s Regional Food Policy Council (RFPC) and Cascade Harvest Coalition’s Forest-to-Table program. With a mission to “work towards a vibrant local and regional food system that supports healthy people, communities, economies and environment,” the RFPC operates under the umbrella of the Puget Sound Regional Council (PSRC). Food Policy Councils (FPCs) are locally, regionally and nationally recognized organizations, on both government and grassroots levels.
“It’s a great privilege to be part of this very important organization,” said Breiman. “We live in a time where it’s critical for people to not only be educated about food, but also involved with everything about it, including food safety.”
In his role with the RFPC, Breiman will help lead efforts related to improving equitable food access, providing outreach and education programs, advancing infrastructure and local economic development, improving public health, and strengthening farmland production and protection.
Both Breiman and Executive Chef Mark Bodinet are serving on the board of Cascade Harvest Coalition’s new Forest-to-Table program. The intent of the program is to provide marketing opportunities, supply chain education and general information for small forest owners throughout the King County region.
Through the Forest-to-Table program, special panel discussions and forums will be held to bring local foresters together through Cascade Harvest Coalition’s new Puget Sound Grown program, which connects growers and suppliers of forestry products, including lumber, edible berries and mushrooms, with potential vendors.
“All of us at Cedarbrook are passionate about the local community,” said Bodinet. “So a program that strives to bring education, food, forestry and the community together is a great personal and professional interest of mine.”
Bodinet recently returned to the Northwest after spending five years as Saucier at the world-renowned French Laundry. Whether he selects ingredients from Cedarbrook’s onsite Chefs’ garden, local farmer’s markets or locally sourced growers and suppliers, authenticity is the cornerstone to Bodinet’s commitment within the region.
Breiman has been named one of America’s Rising Star Chefs by PBS, “a chef to keep your eyes on” by Esquire and one of 13 “Top Hotel Chefs in America” by Bon Appetit. At Cedarbrook, Breiman focuses on the development of sustainable food concepts including onsite composting, water reclamation, growth of a unique onsite farm and striving to make Cedarbrook a model in the region by enriching the guest experience through sustainable practices. Breiman is also a Board Member for Seattle Chefs Collaborative.
