Quintessentially Northwest restaurant set to open on Friday, June 11

Announcing Copperleaf Restaurant's Grand Opening

SEATTLE – (June 10, 2010) – Copperleaf Restaurant, a brand-new, quintessentially Northwest dining establishment, is pleased to announce its grand opening on Friday, June 11, 2010. The Copperleaf dining experience is defined by fresh, locally sourced dishes served in the tranquil ambience of Cedarbrook Lodge, a premier hotel located on 18 acres of restored wetlands in Seattle.

Under the leadership of Culinary Director Roy Breiman and Executive Chef Mark Bodinet, Copperleaf’s dishes are created from carefully selected ingredients from local farmers, artisans, ranchers and fishermen, including Estrella Family Creamery, Nash Family Farms, Snake River Farms, Painted Hills Natural Beef, Full Circle Farm, Wild Wheat Bakery and Theo Chocolate. Breiman and Bodinet maintain an on-site garden that supplies Copperleaf with basil, English peas, wild arugula and other straight-from-the-garden herbs and produce. Through the use of local ingredients, composting and water reclamation, Copperleaf sets a model for sustainable practices and farm-to-table fare.

Menu offerings at Copperleaf include Dungeness crab bisque with early summer truffles and green asparagus; handmade gnocchi carbonara with Estrella Family “Valentina”, fava beans, grilled prosciutto, garden basil and black pepper; and grilled Alder spring lamb shoulder with cold pressed olive oil, snap peas, breakfast radish, fennel, lemon thyme and wild arugula.

“Copperleaf offers diners a sophisticated and responsible dining experience,” Breiman said. “The setting is unmatched and the food is the freshest available.”

Copperleaf Restaurant is an inviting and personalized dining experience, where a large stone fireplace serves as the restaurant’s focal point. Functional windows frame views of Cedarbrook’s lush wetland setting and allow gentle summer breezes to bring in the aroma of cedar trees. Unique elements such as 100 percent organic bamboo fabrics, hand blown glass sculptures by renowned local artists and artisanal handcrafted serving pieces accent the dining room. Seasonal outdoor dining on the Waterleaf Terrace is enhanced by a large, wood-burning fireplace.
